A lot of people dread salads, because they imagine a nasty low-fat salad with a couple of wilted lettuce leaves, two dry, stale croutons, and a splash of sugary dressing.
I LOVE a good salad, but the operative word here is good, and trust me, a couple wilted lettuce leaves aren’t my idea of a good salad, either!
My idea of a good salad is one that’s rich, filling, delicious, and simple. Yes, it has lettuce in it, but that’s not all it has.
A good salad can keep you full for hours. Plus, they’re a great way to use up leftovers.
