What Do I Eat? – December 29, 2018

Batch cooking–that is, cooking enough food to yield you days’ worth of leftovers–is one of my favorite time-saving meal prep tips.

If you’re going to be cooking anyway, make extra! Fry or bake an extra pan of bacon, put it on a plate with extra of the tomatoes and avocado you’re already eating, then refrigerate and save it for tomorrow.

Choose a day of the week to cook up a bone-in ham, pork shoulder, or beef roast, then slice it up and mix and match it with your favorite veggies and salads for the week.
