My sister, Cari, once said my salads look like World War III.
If you’ve seen any of my “What Do I Eat?” videos, you know what she means!
Look, I am NOT someone who wants to spend hours in the kitchen, so most of the food I prepare myself is fast, easy, and painfully simple.
Yet most people I talk to hear the words “meal plan” or “meal prep,” and assume it means spending 8 hours of your Sunday in the kitchen, slaving away over the stove to make gourmet recipes with 63 ingredients apiece.
I get why. Society–plus a lot of “diets” out there–loves to throw complicated recipes at us, to the point we just can’t believe it’s possible for meals to be both delicious and simple.
But I’m here to tell you, they can.
Plus, having a plan is a big part of succeeding at weight loss, and simple meal planning and prep are key, because you’re less likely to go off the rails if your yummy Code Red-approved food is prepped and waiting for you.
Your meal planning and meal prep don’t have to be as simple as mine, but if it’s something you struggle with–or the mere idea of it freaks you out–you may just need to see how simple it can really be.
