- Simple Meal Idea 1: Hard-boiled eggs, black or green olives, baby carrots and Ranch, guacamole, deli meat smothered in cream cheese and wrapped around pickles or asparagus spears.
- Simple Meal Idea 2: Macadamia nut, pecan, and blueberry “cereal” in macadamia nut milk and coconut cream, with a dash of monk fruit to sweeten (if desired). Add some coconut shavings for extra texture, flavor, and crunch!
- Simple Meal Idea 3: Rotisserie chicken from the grocery store deli, riced cauliflower (look for it in the frozen veggies section) heated in a saucepan with cream cheese, seasoned with salt and pepper, and mixed with veggies.
- Simple Meal Idea 4: Steak bites with veggies stir-fried in coconut oil or butter, full-fat unsweetened Greek Yogurt with blueberries or strawberries and sweetened with monk fruit.
- Simple Meal Idea 5: Scrambled eggs, bacon or sausage, avocado or guacamole, and tomato.
See what I mean? These meals are super easy and require a minimum amount of cooking (if any) and prep time.
